Blueberry Oatmeal Bake (Gluten, Diary, and Egg Free)

Finding a breakfast that keeps the whole family happy can be tricky. And apparently we are suppose to feed these kiddos every single day, multiple times! So I’m always looking for fun ways to get them to enjoy a hearty breakfast. This blueberry oatmeal bake is just the answer! Its so tasty and everyone always asks for seconds.

Pro tip: Make two batches at a time so you have breakfast for a couple days. Then you can save those creative brain cells for lunch and dinner haha Enjoy!

Ingredients:

  • 2 cups old-fashioned oats
  • 2 teaspoons of cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon fine-grain sea salt
  • 1/4 teaspoon ground nutmeg
  • 1 3/4 cup of coconut milk
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/2 tablespoon coconut oil
  • 2 teaspoon vanilla extract
  • 1 pint fresh blueberries, divided
  • Optional: Extra fruit for topping, add nuts in dry mixture

Instructions:

  1. Preheat oven to 375 degrees. Grease 9 inch square baking dish.
  2. In a medium mixing bowl, combine the oats, cinnamon, baking powder, salt and nutmeg. Mix well.
  3. In a smaller mixing bowl, combine milk, maple syrup, egg, coconut oil, and vanilla. Mix well. 
  4. Arrange half the blueberries on the bottom of the baking dish. Cover the fruit with the dry oat mixture.
  5. Then drizzle the wet ingredients over the oats. Wiggle the baking dish to make sure the milk moves down through the oats, then gently pat down and dry oats resting on the top.
  6. Arrange the other half of blueberries on top. You can also add other fruit such as a banana.
  7. Bake for 42-45 minutes, until the top is nice and golden.
  8. This blueberry oatmeal bake is delicious served warm but also can stay in refrigerator for up to 4 days (great meal prep recipe!)

Diet: Dairy Free, Egg Free (if you replace eggs with 1 ripe banana, mashed), Gluten Free, Nut Free
