Sheet Pan Eggstravaganza

This sheet pan eggstravaganza is the perfect meal prepping recipe! I usually double the batch and the family devours one and I save the leftovers for the next day. Stays well in the fridge all week! This breakfast also looks so pretty that it would be perfect for a brunch on a special occasion like Mothers Day to impress the guests. No matter when you make this dish it is sure to be a hit!

Ingredients:

  • 6 Medium-large potatoes (any variety)
  • 6 eggs
  • 2 cups of greens (swiss chard, spinach, kale, etc.)
  • 1 package of sausage (we prefer Applegate brand hotdogs)
  • 2 tbsp of olive oil
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 450 degrees
  2. Dice potatoes then mix with paleo powder (or other all seasoning), olive oil, oregano, salt and pepper
  3. Line sheet pan with parchment paper then place potato mixture on top
  4. Bake for 20 minutes on 450 degrees
  5. Add chopped up sausages and greens to same sheet pan
  6. Make six “holes” in the pan and crack an egg in each “hole”
  7. Reduce heat to 400 degrees and bake for approximately 10 minutes
  8. Sprinkle eggs with a touch of parsley and enjoy your sheet pan eggstravaganza!

Alternatives: Sprinkle bacon on top, add veggies (zucchini, carrots, etc.), top with cheese, sprinkle with everything but the bagel seasoning (also so so delicious!)
