Good morning, friends! I’ve been wanting to incorporate liver into my diet but definitely needed a baby step.  The taste of liver has never appealed to me. Thats putting it pretty mildly! Anyone else?

Mixing it with other meats that will hide the taste seemed like a perfect idea. These offal meatballs are packed with great nutrients that my kiddos didn’t even question. And more importantly, they are delicious! Win win!

Instructions:

  1. Preheat oven to 350 degrees
  2. In sauce pan, cook the spinach in bone broth until thoroughly wilted
  3. Add spinach mixture with chicken liver into blender and blend well
  4. Mix all ingredients in large bowl
  5. Shape into meatballs and place on baking sheet with parchment paper
  6. Bake for approximately 40 minutes. Check occasionally as time will vary depending on size of meatballs
  7. Enjoy these offal meatballs on top of a salad or spaghetti squash
