Paleo Pop-tarts (Gluten free, Egg Free, Nut free)

Growing up I was always eating quick breakfast meals including the classic pop tart. It was a staple in our home and so convenient. Now I’m older and wiser and not a fan of processed sugar for the family. Sometimes you just need something fast, though, and these paleo pop tarts are perfect.

This healthy twist on the famous pop tart gives me all the nostalgic feels without the sugar high and the tummy ache. I’ll be making double batches and putting them in the freezer for an easy breakfast/treat!

I see many versions of this delicious pastry coming soon because the family is already hooked!

Ingredients:

  • 1 1/4 cassava flour
  • 1 tbs gelatin
  • 1 tsp sea salt
  • 1/2 cup coconut butter (softened in microwave for 10 seconds)
  • 2 tbs maple syrup
  • 3/4 cup and 2 tbs of water
  • 1/2-3/4 cup jam of choice (make sure to check ingredients if following an elimination diet)

Instructions:

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Combine dry ingredients in bowl. Mix well then set aside.
  3. In a separate bowl, add coconut butter, maple syrup, and water. 
  4. Using a hand mixer, mix wet ingredients well.
  5. Pour wet ingredients into dry ingredients and mix with fork until dough forms.
  6. Place dough between two pieces of parchment paper. Use rolling pin to flatten dough until thin.
  7. Cut out piece of parchment paper in size you would like the pastry. I decided on 2inches by 3 inches and it was the perfect size for little fingers and so cute!
  8. Utilize a knife or pizza cutter to cut the dough using your template.
  9. Then use a spatula to remove one rectangle and place on prepared baking sheet.
  10. Place approximately 1 tbs of jam on top of transferred rectangle. 
  11. Wet the edges of the rectangle before gently placing another rectangle on top. 
  12. Next, use a fork to imprint the edges to seal.
  13. Repeat steps 9-12 until all pop-tarts are done. This recipe makes approximately 12 depending on thickness of pastry.
  14. Bake for approximately 20 minutes or until golden brown. Your paleo pop tarts are now done. Enjoy!
