Slow Cooker Sweet Potato Chili

Who doesn’t love a big delicious bowl of chili?! Well I know I do! It feels like a warm hug and is so inviting during these cold winter months. This slow cooker sweet potato chili is a staple on Sundays because it is just wonderful as meal prep for the week. I actually make two batches of this-one for our dinner and one for our lunches for the week. I promise, it’s that good 😉

Ingredients:

  • 2 lbs of ground beef, turkey and/or pork
  • 3 bell peppers
  • 4-5 medium sweet potatoes
  • 8-10 medium/large carrots, peeled
  • 1 28oz can of diced tomatoes
  • 15 oz can of tomato sauce
  • 1/2 tsp salt
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp red pepper flakes

Instructions:

  1. Brown ground beef in frying pan on top of the oven. Add paleo powder to meat.
  2. Clean, peel, and dice all of the your veggies
  3. Place ground beef, veggies, and all other ingredients into crockpot
  4. Cook on low for 8-10 hours then enjoy a bowl of deliciousness! 

Tips:

  • Running low on time? Organic frozen sweet potatoes or butternut squash work well to decrease your chopping time. Baby carrots work as a replacement for regular carrots also to help decrease chopping time
  • Variety: Adding squash, beans or more veggies are great options to cater to your taste preferences. Make sure to read ingredients if following whole30 or paleo diet
  • Toppings: Jalapeños, avocado, and/or garnish are all lovely ways to top your slow cooker sweet potato chili. If not following paleo/whole 30 some cheese on top would be a yummy touch.
  • Freeze in mason jars and they will last for up to 6 months

    We love the sweet potato chili I make it almost every week. I add more meat and I add green beans my husband ask for it all the time. Great for lunches
