Banana Cinnamon “Oatmeal” (Paleo, Whole 30, AIP)

When I was trying to find more egg free breakfasts I quickly found a bunch of nothing. This banana cinnamon oatmeal recipe is a healthy and totally delicious recipe that my toddler constantly asks for!

What makes this oatmeal so unique is that the main ingredient is spaghetti squash. Squash is so versatile and no one will be able to guess the ingredient as this oatmeal doesn’t taste anything like squash! Spaghetti squash is also loaded with vitamin A, C, and K. I’m always looking for delicious ways to sneak nutritiously dense ingredients into my families meals.  It’s a win win for everyone!

blueberry oatmeal

Instructions:

  1. Add all ingredients to a pot, mix well, and bring to a boil
  2. Immediately turn down to simmer and cook until very hot throughout
  3. Use immersion blender until oatmeal is smooth and desired texture
  4. Add toppings like cinnamon, fruit, raisins, etc.)
  5. Serve warm or store in refrigerator for up to 5 days
  6. Enjoy this delicious banana cinnamon oatmeal!
