Get ready for the best turkey chowder ever!

My mother-in-law is the kind of woman that likes to bring an item or pre-purchased dessert when invited over for dinner. Over the years she has given up trying to understand my sensitive tummy and what upsets it this week (as many of you know it can be a full time job!) So this year she tried something new. When she arrived to thanksgiving dinner she reimbursed me for the turkey at the front door hahaha bless her heart!

So naturally I felt like she deserved more than just one yummy thanksgiving dinner for her contribution. Two days later we invited her over for turkey soup and bisquits. Everyone was thrilled with how the soup turned out! It was thick, filling, and full of flavor! She is actually the one who named it the best turkey chowder ever 🙂

Turkey Chowder

Ingredients:

  • 64 ounces of bone broth
  • Left over turkey meat
  • 1 onion
  • 4 cloves of garlic
  • 15-20 medium carrots
  • 6 white potatoes
  • 3 sweet potatoes
  • 6 stalks celery
  • 1 can of peas
  • 13.5 oz coconut milk
  • 2 tsp sea salt
  • 1 tsp rosemary
  • 1 1/2 tsp thyme
  • 1/2 tsp arrowroot powder
What I used for this recipe:

Instructions:

  1. Sauté chopped onions and garlic in splash of olive oil in large stew pot
  2. Add broth along with diced carrots, potatoes, celery
  3. Bring to boil then let simmer until veggies are soft
  4. Scoop half of the veggies out into separate bowl and use immersion blender to throughly blend rest of ingredients left in stew pot.
  5. Add back rest of cooked veggies along with peas, coconut milk, seasoning, arrowroot powder and turkey meat
  6. Mix well and left simmer for approximately 30 more minutes until done
  7. Serve warm and enjoy!

Tips:

  • Make broth the night before to save yourself some time
  • Drain broth when feeding toddlers so they can easily scoop or eat with fingers
  • Leftovers will last well for up to 5 days in fridge or freeze for a lovely dinner when you are not in the mood to cook
  • Pairs well with these grain free biscuits
