Easiest Shredded Chicken (Paleo, Whole 30, AIP)

Are you guys ready for the easiest shredded chicken ever?  This chicken makes me so happy for many reasons but mainly because it tastes delicious! It’s perfect to store in freezer for quick lunches/dinners and can be used for just about any recipe.

Ideas:

  • Add chicken to tacos, burritos, fajitas for a delicious Mexican dish
  • Paleo chicken pot pie
  • Use in soups. Click here for my favorite one 
  • Include in a salad for added protein
  • Add chicken to wraps such as a homemade plantain wrap

Ingredients:

  • 4-6 Boneless Chicken Breasts
  • Approximately 4 tbs of paleo powder (click link and use code VICTORIADOOLEY for 15% off)or other all seasoning
  • 1/4 cup of bone broth or chicken broth

* Shredded chicken added to hearty salad with primal ranch and tessemae bbq sauce 

What I used for this recipe:

Instructions:

  1. Trim chicken and add to crockpot with broth
  2. Add paleo powder generously over chicken
  3. Cook on low for 6-7 hours (until chicken is cooked through)
  4. Shred chicken on plate then add back into liquid in crockpot
  5. Stores well in freezer for a simple meal prep option. Enjoy!

Tip: Place serving size in freezer approved container or zip lock bag. Keep in freezer for up to 6 months. Thaw in bowl of warm water. Enjoy!
