Perfect Paleo Pork Loin (Whole 30, Low FODMAP)

The smells coming from the kitchen while this delicious meal slowly cooks in the oven just screams fall to me! This perfect paleo pork loin is great to impress guests during the holidays or for a relaxing crisp Sunday while football is on. You really can’t go wrong!

Ingredients:

  • 5lb Pork Loin
  • 3 tbsp Ghee
  • Olive Oil
  • 4 tbsp Paleo Powder (click link and use code VICTORIADOOLEY for 15% off) or other All Seasoning 
  • 4-5 Medium/Large Potato of Choice
  • 6-8 Large Carrots or 1 Small Bag of Baby Carrots
  • 1 Onion (omit if following the Low FODMAP protocol)
  • 1.5 tbs Thyme
  • 1.5 tbs Rosemary
  • 4 cups Bone Broth
  • 3 Bay Leaves
  • Salt to Taste

What I used for this recipe:

Instructions:

  1. Add olive oil to dutch oven and turn on medium heat
  2. Rub ghee and paleo powder all over pork loin 
  3. Sear the meat on each side in dutch oven until brown. Then place meat aside on plate.
  4. Next, add bone broth and loosely chopped onion and carrots to the pot. Cook on medium heat for approximately 10 minutes while stirring occasionally.
  5.  Then place the roast on top of the vegetables, add the remaining broth, along with the loosely chopped potatoes, thyme, rosemary, salt and bay leaves. 
  6.  Place in oven on 270 degrees for 2 hours and 30 minutes to 3 hours (oven times vary). Alternately, this dish can be prepared in a crockpot on low for 6-8 hours.
  7. Serve this perfect paleo pork loin warm and enjoy! Can store leftovers in fridge for up to 5 days.
